Sometimes our students cheer when Next Door dieticians walk into the classroom to serve lunch.
We have a kitchen on-site and often cook from scratch.
Snacks like these pumpkin muffins are popular. Low in sugar, high in Vitamin A –they’re more than healthy. They actually taste good! The whole grains also make it high in fiber.
We’re happy to share this recipe. We want our students, our families and the entire community to eat right and stay healthy all year long!

You can use this for pumpkin bread or muffins.
Note: This recipe will work the same for bread and muffins. We use half whole wheat flour; 1-1/2 cups all-purpose flour and 1-1/2 cups whole wheat flour.
